Morel Mushrooms
Morel Mushroom Pasta in Parmesan Cream Sauce
Ingredients (serves 4)
1/3-1/2 lb fresh morel mushrooms
4-5 garlic cloves
1/2 cup butter
2 cups heavy cream
2 cups vegetable stock
1 cup fresh parmesan, grated
2 tbsp. fresh chives
2 tbsp. fresh tarragon
1 tsp fresh lemon zest
salt and pepper to taste
Directions
Boil water and cook pasta. Prepare other ingredients while doing so.
In large saucepan, melt butter.
Add morels and cook until golden.
Add garlic and cook for about 30 seconds. Stir often.
Pour in vegetable stock and cooks until stock is reduced to about 1/4 cup.
Add heavy cream and stir. Let simmer.
Stir in Parmesan until it melts. Let simmer to thicken. Do not boil.
Drain pasta when ready.
Remove sauce from heat and add chives, tarragon and lemon zest.
Add salt and pepper, if needed.
Toss pasta with the sauce.
Serve.
