Spring Salad with Fennel and Orange 

Ingredients

Dressing:

• 1/4 cup white sugar

• 1/4 cup red wine vinegar

• 3 tablespoons olive oil

• 1 tablespoon chopped fresh basil

• salt and pepper, to taste

Salad:

• 1 1/2 cups mixed salad greens

• 1 medium orange, peeled and split into pieces

• 1 small fennel bulb, thinly sliced

• 1/2 medium red onion, thinly sliced

• 1/2 cup slivered onions

• 1/2 cup dried cranberries

Directions

1. Place sugar, vinegar, oil, basil, salt and pepper in a bowl. Whisk together until sugar dissolves. 

2. Put mixed green, orange, fennel, onion, almonds and cranberries into another bowl. Toss together. 

3. Pour dressing over the salad and toss. 

4. Serve.
